Firebirds Delivers Upscale Dining Without the Steakhouse Sticker Shock
A Colorado Lodge Feel with Charlotte Roots
Firebirds Wood Fired Grill has been serving Fort Mill diners for nearly two years, bringing its signature wood-fired cooking to one of York County's newest retail corridors Mills Crossing.
Today, Firebirds operates at more than 50 locations nationwide, most designed with a Colorado ski lodge aesthetic centered around an open wood-fired grill.
The restaurant occupies an attractive niche in the steakhouse market. It offers a step above LongHorn Steakhouse, Outback Steakhouse and Texas Roadhouse in both ambiance and menu, while remaining noticeably more affordable than premium brands such as Ruth's Chris, Del Frisco's or Capital Grille.
An Interesting Wichita Connection
One detail caught my attention before we ever walked through the door.
Firebirds traces its beginnings to Charlotte, where Wichita natives Dennis Thompson and Doug Glendenning founded the company. Having knowledge of Wichita myself, I found that connection interesting but not surprising.
Wichita has quietly produced an outsized number of successful restaurant entrepreneurs. Much of that can be traced back to the city's role as the birthplace of Pizza Hut. As former Pizza Hut executives and franchise operators branched into new ventures, a network of experienced restaurateurs emerged, creating what feels like a family tree of restaurant concepts. Firebirds is one of those success stories, although the company has since changed ownership twice and is now owned by Garnett Station Partners.

What We Ordered
Before our meals arrived, Firebirds brought a loaf of complimentary warm, house-baked bread to the table. Served with whipped butter, it was a welcome start to the meal and disappeared quickly.

Our Sunday lunch featured three very different menu selections.
My wife paired the Chicken Tortilla Soup with the Mixed Greens Salad, featuring tomatoes, candied spiced pecans, jicama and the restaurant's recommended cilantro lime vinaigrette.


Our daughter ordered the Steak Tacos, filled with wood-grilled chimichurri steak, cabbage, pico de gallo, pickled onions and spicy sriracha sour cream.

I selected the Grilled Salmon Salad, topped with wood-grilled salmon, mixed greens, tomatoes, candied spiced pecans and jicama, also dressed with the cilantro lime vinaigrette.

The verdict around the table was unanimous. Every entrΓ©e was fresh, flavorful and well prepared. The salmon was cooked perfectly, the tacos were packed with flavor, and the soup-and-salad combination made for an excellent lighter lunch.
Service That Anticipates
One of the biggest differences between average and memorable restaurants is service that anticipates rather than reacts.
Our server, Kelsey, did exactly that.
Without being asked, she noticed the ice melting in our glasses and brought fresh ice to the table. Beverage refills appeared before anyone had to ask. Throughout the meal she checked in regularly without becoming intrusive.

Those are the small touches that elevate the overall dining experience, and Kelsey executed them exceptionally well.
Value
The pricing felt appropriate for the quality of the food, service and atmosphere. Firebirds isn't inexpensive, but they deliver an experience that justifies the cost.
One item made me pause: fountain drinks and iced tea were priced at $3.99. While that has become increasingly common at full-service restaurants, it's still a number that catches my attention.

The Verdict
Firebirds succeed because it doesn't try to be the most expensive steakhouse in townβit simply focuses on delivering quality food, attentive service and an atmosphere that feels special without feeling pretentious.
